Eclair at the Bay is a modern Brisbane patisserie specialising in flavour-first Γ©clairs and choux pastry desserts. Born in Byron Bay, now in Newstead, we make Γ©clairs, profiteroles, croquembouches, seasonal tarts, gluten-free mousse cakes and celebration cakes for weddings, birthdays, corporate events and Friday afternoons.

We start with flavour and work backwards: premium ingredients, balanced pairings, considered technique, and a refined-but-relaxed aesthetic. We don’t decorate for decoration’s sake. We make pastry properly, finish it elegantly, and let the taste do the talking.

For weddings, we offer a full range of desserts: Croquembouches (our most popular choice, from 15 to 140 choux), XL Cakes in Raspberry Chantilly and Tiramisu, Mini Γ‰clairs and Profiteroles perfect for platters and the space between speeches, and a selection of Tarts for something a little less expected. We believe wedding desserts should be delicious enough that your guests come back for seconds. Not too formal, not too traditional because sweets should be fun on your day. And not just there for the aesthetic, but to mark the moment and bring everyone together around something genuinely good.

We cater to weddings of all sizes, from intimate gatherings to larger celebrations. Whatever your guest count, we’ll make it work.

What services do you offer for weddings?

We offer a full range of handmade wedding patisserie, including Croquembouches (our most popular choice, from 15 to 140 choux), XL Cakes in Raspberry Chantilly and Tiramisu, mini desserts perfect for platters, and a selection of tarts if you’re looking for something a little less traditional.

Everything is made fresh on the day at our Newstead patisserie because your wedding table deserves nothing less.

What sizes and flavours does your Croquembouche come in?

Our Croquembouche is available from 15 to 140 choux, so whether you’re planning an intimate gathering or a large celebration, we have a size to match. As a guide, we recommend 1–2 choux per guest.

All Croquembouches are filled with vanilla crème diplomate, chocolate crème diplomate, or a combination of both finished with toffee caramel, edible flowers and a touch of glitter. Every one is made fresh on the day, just a few hours before your event.

For delivery, we require a minimum of 70 choux. Smaller sizes are available for pickup from our Newstead patisserie.

How do cake tastings work?

The best way to get a feel for our desserts is to visit our patisserie in Newstead, Brisbane, where you’ll find our full range of Γ©clairs and desserts fresh daily β€” a delicious introduction to the quality of our ingredients and craftsmanship.

For croquembouche, our signature flavours are vanilla and crème diplomate. Get in touch and our chef can prepare samples for you to try.
For XL cakes, we don’t offer individual tasting portions, but many of the desserts in our shop showcase the same flavours, textures, and quality you can expect.
Every event is different, so tastings are arranged case by case reach out to our team and we’ll happily accommodate you.

Can you accommodate dietary requirements?

In some cases, yes some desserts can be made gluten-free, including our entremets, mini mousse cakes, and XL Raspberry Chantilly. Please ask when ordering. Unfortunately, our croquembouche and Γ©clairs can’t be made gluten-free, as choux pastry relies on wheat flour.

We do not currently offer vegan or dairy-free options butter, cream, and eggs are at the heart of our pastries, and we haven’t found a substitute that meets our standards (yet!).

A note on allergens: Our kitchen handles nuts, gluten, dairy, and eggs, and while we take every care, we are not an allergen-free facility. Please advise us of any allergies when ordering, Eclair at the Bay cannot be held responsible for reactions arising from undisclosed requirements.

How far in advance should I place my order?

The earlier, the better and we mean it.
For weddings, we recommend reaching out at least 3 to 6 months in advance, especially for peak season dates (October through March).
Not sure exactly which desserts you’d like yet? No problem you can secure your date first with a $500 non-refundable deposit, then we’ll work through the details together at your own pace. No rush, no pressure.

Do you offer delivery and set up for the wedding?

Yes delivery is available for Croquembouche (70 choux and above) and XL Cakes, and is assessed on a case-by-case basis, with fees quoted according to your event location. All other orders are pickup only from our patisserie in Newstead.

Delivery covers transport of your order to your venue. Setup and styling isn’t included as standard, but if you have specific requirements, just mention them in your inquiry and we’ll let you know what we can arrange.
